In the usually cold and grey start to the new year, multi award-winning Executive Head Chef Davide Degiovanni is set to bring sunshine to Test Kitchen with his sublime Italian menu in a four-night pop-up.

Born and raised in Northern Italy, Degiovanni leads the team at Gordon Ramsay’s Union Street Café in south London where his innovative Italian dishes celebrate the finest seasonal ingredients that will also feature in his menu in Hong Kong.

Davide’s experience delivers a culinary resume of serious class, with stints running restaurants for The Four Seasons, one Michelin-starred Ristorante Semplice and time as sous chef at one Michelin-starred Locanda Locatelli, one of the UK’s finest Italian restaurants, before running Ramsay’s Union Street Café since 2013.

His menu shows the influences and flavours which have shaped him in dishes like Whipped salted cod Polenta & pickled Red Cabbage, one of three antipasti to kick off dinner in serious style. His version of the classic Vitello tonnato – the famed mix of veal, tuna, capers & anchovies – is sublime, while there’s no surprise that his risotto and pasta are absolutely first class. Gnocchi come with Gorgonzola, leeks & hazelnuts, while his risotto features ricotta, shellfish & salsa verde to brilliant effect.

Ox cheek combines a world of flavours with radicchio and fermented orange, before pumpkin gelato and his own tiramisu remind why they are two of the world’s finest and most popular desserts.

About our chef:

Born and raised in Northern Italy, Davide started his culinary career in Soho, London, as Chef de Partie at the one Michelin-starred Picasso Room in Escargot in 2002. In 2003, he moved to the now closed, Restaurant Teca in Mayfair, working up the ranks from Chef de Partie to Sous Chef.

In 2005, Davide moved to the five-star Baglioni Hotel in Kensington where earned the position of Head Chef. Two years on, Davide joined the kitchens of one Michelin-starred Ristorante Semplice as Sous Chef before taking the position of Head Chef at Casta Diva restaurant in Moscow in 2008 for two years.

In 2010, a return back to London to one Michelin-starred Locanda Locatelli as Sous Chef followed. Davide’s last position before joining Gordon Ramsay Restaurants was as Head Chef for the re-opening of Amaranto Restaurant at the five star Four Seasons Hotel in Mayfair.

Davide joined Gordon Ramsay in 2013 to open Union Street Café, and continues to lead the team to offer a changing menu of innovative Italian dishes featuring seasonal and authentic ingredients.
